Abstract: In this report, a discotic pyridyl amphiphile was found to coassemble with complementary acids to form emulsion gels with porous architecture. Cooperative self-assembly between amphiphilic pyridyl derivatives and complementary acids was established by several spectroscopic techniques. The alteration of complementary acids helps to tune the mechanical property of the bicomponent emulsion gels and also leads to nanostructural diversity. Further, the formed supramolecular nanostructures of emulsion gels with large pores and surface area exhibit as a template for lipase (from Candida rugosa)-catalyzed inclusion of gastrodigenin (p-hydroxybenzyl alcohol) via an esterification reaction. The enzymatic reaction leads the emulsion gel to separate into two phases, which results in recyclability of the pyridyl amphiphiles. © 2017 American Chemical Society.
